Ingredients: 1/2 cup all-purpose flour 1 teaspoon garlic powder 1/4 teaspoon salt 1/4 teaspoon black pepper 1/4 teaspoon onion powder 1/4 teaspoon cayenne pepper 2 eggs, beaten 2 tablespoons milk 2 cups dry bread crumbs 8 teaspoons olive oil, divided 1 (14 1/2-ounce) can diced tomatoes, undrained 3 tablespoons chopped green onions 3 tablespoons red wine vinegar 3 tablespoons Worcestershire sauce 1 tablespoon Creole seasoning 4 cloves garlic, minced

Instructions:

Pat the carp dry with paper towels. In a shallow dish, combine the flour, garlic powder, salt, black pepper, onion powder and cayenne pepper; set aside. In another shallow dish, whisk together the eggs and milk. Place the bread crumbs in a third shallow dish. Dip the carp into the flour mixture to coat evenly; shake off any excess. Dip into the egg mixture, then coat with bread crumbs.

In a large skillet over medium-high heat, heat 4 teaspoons oil until hot. Add half of the carp and cook for 3 minutes or until golden brown. Turn and cook for 3 minutes more or until cooked through. Remove from pan and keep warm. Repeat with remaining carp and oil.

Add the tomatoes to the skillet; bring to a boil. Cook for 5 minutes or until slightly thickened. Stir in green onions, red wine vinegar, Worcestershire sauce and Creole seasoning. Spoon over carp. Serve immediately
